Many historic chains need to undergo a transformation in order to keep up with the demanding expectations for quick service restaurants in the modern digital world. For Papa Gino’s & D’Angelo’s Sandwich Shops, this was no different. After emerging from bankruptcy in 2018 under the brand name New England Authentic Eats, management empowered Greg Sheeha, Director of Learning and Development, to modernize some of the archaic processes that were inherited.
Almost immediately, site visits and quality assurance checks were identified as one of these outdated systems. Both government mandated inspections and internal audits were being done using a paper and pencil system, resulting in an inefficient process that lacked any accountability: “It was too easy to dry lab, or fake it. It became more like a task for people to do rather than a process. Definitely not in line with what we expect out of technology today.”
Once making the switch to digital site inspections with MeazureUp’s AuditApp, a number of benefits were instantly seen. Naturally, efficiency was increased due to shorter assessment times, but it felt like purpose returned to site visits: “You can craft questions that feed to a particular goal, which really helps with training and coaching, with creates efficiency, but also buy in. It’s not “Hey gotcha!”, it helps employees understand both what the standards are and how to get there.”
Sheehan also found it much easier to coach employees by baking expectations into AuditApp: “An example would be the quarterly safety audits that need to be done in our New Hampshire restaurants. It’s a requirement from a compliance standpoint, so we can get really good reporting against that every quarter to make sure it’s done right. But once the assessment is completed, we use action plans at the restaurant level, so people can correct the identified issues. We recent;y identified that there was an opportunity to get new floor mats because it was curling up at the edges. And that can be action planned out to make sure it happens. Then by adding pictures on the actual assessments themselves, it effectively closes the loop.”
